Strategy:
Gascoigne is a fast, aggressive hunter. In his human form, he can be parried with your firearm; practice the timing to land visceral attacks. Use the tombstones in the arena for cover. In his beast form, he becomes more feral and relentless. Molotov Cocktails are very effective here. The Tiny Music Box (obtained from Viola's daughter) can stun him briefly in both forms, providing openings for damage. Stay aggressive and dodge through his attacks.
