It's generally best to specialize dwarves in a few key skills rather than making them generalists. For example, assign one dwarf solely to 'Mining' and another to 'Masonry'. This allows them to gain experience faster and become highly skilled. Use the 'Manager' (n-m) to automate work orders for workshops.
