Payday 2 offers a range of difficulty levels, from Normal to Death Sentence One Down. Each increase in difficulty brings more aggressive enemies, fewer resources, and stricter stealth requirements. Start on Normal or Hard to get a feel for the game before attempting Overkill or Mayhem. Death Wish and Death Sentence are reserved for experienced crews with optimized builds and excellent coordination. Don't rush into higher difficulties; master the basics first.
