Every time your Pokémon defeats another Pokémon, it gains EVs in specific stats (e.g., defeating a Zigzagoon gives 1 Speed EV). A Pokémon can gain a maximum of 510 EVs in total, with a cap of 255 EVs per stat. Every 4 EVs in a stat equals 1 stat point at Level 100. To effectively EV train, you'll want to target specific wild Pokémon that give the desired EVs. For example, defeating Wingull gives Special Attack EVs, while defeating Geodude gives Defense EVs. Holding the Macho Brace (doubles EV gain) or using vitamins (e.g., Carbos for Speed, Protein for Attack) can speed up the process. This is crucial for competitive play but also helps make your in-game team stronger.
