Many late-game missions involve destroying a heavily fortified enemy base. These 'boss' bases are typically protected by numerous Watch Towers, defensive structures, and a large standing army. The key is a multi-pronged approach. First, use Catapults (Orc) or Ballistas (Human) to destroy Watch Towers and outer defenses from a distance. Simultaneously, use flying units (Gryphon Riders/Dragons) to scout and harass enemy resource gatherers or vulnerable structures. Finally, send in your main ground army to clear out the remaining units and buildings. bring spellcasters for support.
