The simplest way to win is to achieve six points in a single turn from a good starting position. You flick coins using the R2 button, and the longer you hold it, the further the coin travels. If you find zeni hajiki difficult, you can enable the "Zeni Hajiki Shot Power Display" option in the Accessibility settings. This adds a reticle showing the projected path of your flick.
