There are several optional activities to complete before or after the final boss in Hollow Knight. These include trials at the Colosseum of Fools, receiving a blessing from Salubra, defeating every enemy, and conquering remaining Dream Bosses. For further replayability, you can aim to complete all achievements, such as choices involving Zote, or sparing/killing the Nailsmith, and explore speed-running the game.
