Research the Graveyard, one of the final rooms.

Build the Graveyard. Its shortcut key is G.

Place dead bodies (from slain heroes or dungeon inhabitants) in the Graveyard to decompose.

After 10 bodies decompose, a Vampire will be created and will work for you.

To speed up decomposition, deploy a Hell hound in the Graveyard. The Hell hound will urinate on the bodies, increasing decomposition speed.

Tips

Dead bodies lying around will sadden and annoy most of your creatures, except for the Horned Reaper and the Vampire. Building a Graveyard helps prevent this.
The Graveyard costs 300 per tile.
