Cardinal Carcass:

Cardinals, and other small birds, can be tricky because they often fly off. There's a really good spot north of Annesburg, right where the path crosses the river twice. Head there in the morning. You'll often find these birds sitting on rocks, which makes lining up a shot much easier with your bow and Small Game Arrows. Just be super careful not to spook them, and keep an eye out for cougars – they like this area too.

Woodpecker Carcass:

Woodpeckers are also a bit elusive, but they stick to wooded areas. There are two types: the Red-bellied Woodpecker, usually found northeast near Annesburg, and the Pileated Woodpecker, which hangs out in the New Hanover woods. Honestly, the spot I mentioned for the Cardinal is a great place to look for Woodpeckers too, so you might get lucky and bag both there.

Rat Carcass:

For the rats (and bats!), head south of Annesburg to a small lake called Elysian Pool. There's a waterfall there; go behind it to find a cave. It'll be dark inside, so make sure you've got your lantern equipped (it uses the same slot as your knife). Use those Small Game Arrows here – the rats are pretty easy targets in the confined space.

Once you've got all the required carcasses – Cardinal, Woodpecker, and Rat – they're small enough to fit in your satchel without worrying about spoilage.
