Talk to Master Jean: Teleport to the Knights of Favonius Headquarters in Mondstadt. Enter the HQ and take the first door to the left to find Jean. She will explain that the Knights need proof of dealings between the Lawrence Clan and the Fatui and will direct you to speak with Schubert.

Look for the former aristocrat in the city: Exit the HQ and head northeast. Schubert can be found over the wall behind Hertha, the City Reputation coordinator. Approach him, but he will refuse to speak with you due to perceived lack of manners.
