First things first, you need to have completed the 'The Incomplete Stable' side quest. After that, you'll also need to have finished at least one of the main Temple questlines (or two total, if you're counting the first one you did for 'The Incomplete Stable'). Once those are done, head back to Lookout Landing.

You'll find Lester looking a bit distressed. Talk to him, and he'll explain that his horse, Spot, has run off. He'll give you a hint that Spot is nearby and describe him as having a 'beige coat and gray dappling'. Don't get too caught up in his other comments about not being able to climb; the important part is that Spot isn't far.

Exit Lookout Landing through the southern exit. Take a look around the immediate plains to the southwest. You should see a group of horses grazing.

Keep an eye out for the horse that matches Spot's description: beige with gray dappling.

Once you've spotted him, crouch down (press the B button) and carefully approach Spot from behind.

When you're close enough, you'll get a prompt to press the A button to begin taming.

While riding Spot, keep pressing the A button to 'Soothe' him. This is just like taming any other horse!

Once Spot is tamed, ride him back to Lester. Make sure you're targeting him as you approach.

Lester will be super grateful! As a reward, he'll give you a Purple Rupee (worth 50 Rupees), a Swift Carrot, and best of all, Spot becomes yours to keep!

Tips

Remember to register Spot with Lester after the quest is complete if you want to easily board and retrieve him later. Just talk to him again about horse registration.
Spot actually has some pretty decent stats for a horse, so he's a worthwhile addition to your stable!
