Normally, you'll get to Roundtable Hold after you've dealt with Margit, the Fell Omen, right outside Stormveil Castle. Just rest at the Site of Grace nearby, and Melina will show up. She'll say you've proven yourself and offer to take you somewhere useful.
But hey, if you're impatient like me and want all the goodies and services of the hub *before* fighting Margit, there's a quicker way! You just need to use a Site of Grace that's outside of Limgrave. The fastest way to do this is to head northeast from the Third Church of Marika in East Limgrave. Follow the stream north, and keep an eye out amongst the trees for a portal. This portal will zap you over to Dragonbarrow in Caelid. Inside the temple there, you'll find a Site of Grace that'll take you straight to Roundtable Hold. Fun fact: D's questline also leads you to this portal!
Alternatively, if you're feeling brave, you can head to the very northeast edge of East Limgrave, near the border with Caelid. You'll find the Smoldering Church there. Be warned, Anastasia the Transed Eater will invade you, but once you defeat her, you can head inside the church and use the Site of Grace to get into the Hold.
So, what even *is* Roundtable Hold? It's basically our safe house. You'll meet a bunch of other characters there, many with their own quests. You'll also find important merchants, including a Blacksmith who can upgrade your weapons past +3, and vendors for Incantations and Sorceries.
